1 mango, peeled and diced small 1 red bell pepper, seeded and diced small 1 cup thinly sliced scallions 1 cup chopped cilantro 1 tablespoon vegetable oil (safflower or grapeseed) 2 tablespoons wine vinegar, balsamic vinegar ¼ teaspoon salt ½ teaspoon freshly ground pepper 1 teaspoon Italian Dressing Seasoning or Pasta Sprinkle (Penzey’s brands) or other herbs you find interesting and flavorful 2 cups cooked quinoa (about ¾ cup raw) 1 15 ounce can black beans, rinsed and drained 1-2 finely diced jalapeno peppers (optional)
