Heat the oven to 425 degrees. Chop cauliflower into bite size pieces. Put into a baking dish and sprinkle with olive oil. Cook for 30-40 minutes. Toss the cauliflower so it cooks evenly. Cook until it browns and softens. You’ll be amazed by how much it shrinks. Then serve. Very yummy.
